About Whole Blanched Hazelnuts, 5 lb and 55 lb
Blanched hazelnuts are whole hazelnut kernels with the bitter brown skin removed, which is what pastry chefs, chocolatiers and confectioners need for pale, clean praline paste, gianduja, hazelnut flour and dacquoise. The 5 lb pack suits bakeries and chocolate shops; the 55 lb case is the manufacturing and high-volume size.
Roast them lightly to deepen the flavor before grinding into paste or chopping for financiers, biscotti, brittle and granola, or leave them raw for a milder note in savory crusts and salads. Hazelnuts are high in oil, so keep them sealed and cold, refrigerated or frozen, and bring to room temperature before use. The brand in the case can change from time to time; the product does not. Contact us before ordering for brand-specific kosher or labeling details.
